For about ten people, the ingredients are: 300 grams of double zero flour; 250 grams of cottage cheese; 125 grams of stevia or 250 of normal granulated sugar; 100 milliliters of orange juice; 50 grams of dried apricots; three eggs; a sachet of baking powder.

The preparation

The first thing is to squeeze the oranges, after which the juice is cooled in the refrigerator and when it has reached the right temperature, the dried apricots are soaked.

The next operation is to whisk the three eggs together with the stevia (or with normal sugar), working the mixture until it takes on a light color and a frothy consistency.

At this point the ricotta is sieved and incorporated into the above mixture, if possible with the aid of a kitchen spatula.

Once the ricotta is added, it’s the turn of the double zero flour, which must also be sieved (together with the baking powder) and then mixed with the rest of the mixture in order to avoid lumps.

Now is the time to filter the orange juice, cut the apricots into small pieces and add them to the rest of the ingredients, working everything until the mass reaches a uniform consistency.

Then you get a rectangular cake mold and pour the dough into it.

Finally, everything is placed in a preheated and ventilated oven at 170 degrees for three quarters of an hour. Once cooked (this can be verified with the proverbial toothpick test), cut the cake into squares, wait for it to cool and then serve.
