Soft yogurt cake: ingredients and preparation

For this delicious cake, get:

  • sugar or sweetener to taste, 70 g
  • natural or light white yogurt , 350 g
  • eggs, 4
  • lemon, 1 organic, zest only
  • powdered sugar , to taste to decorate.

Preheat the oven to 170° . Grease and flour a 20cm diameter cake tin. If you prefer, you can line it with the special paper, wet it and squeeze it well so that it adheres perfectly to the bottom and edges.

Separate the yolks and whites in two bowls and whip the latter until stiff.

Beat the egg yolks with the sugar or sweetener, use an electric mixer to do it first: you must obtain a clear and frothy mixture. Add the yogurt and the grated zest, mixing perfectly. With a spatula and making delicate movements from bottom to top, incorporate the egg whites until stiff. Then transfer everything into the mold and bake for about half an hour.
